Dry Brined Turkey Recipe

Ingredients:

  • 1 12-14 lb. turkey
  • 1/4 cup kosher salt
  • 1 tablespoon brown sugar
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 tablespoon dried thyme
  • 1 tablespoon dried sage
  • 1/4 cup unsalted butter, softened

Directions:

  1. Remove the turkey from its packaging and pat dry with paper towels. Place the turkey on a wire rack set over a baking sheet.
  2. Combine the kosher salt, brown sugar, black pepper, garlic powder, onion powder, paprika, thyme, and sage in a small bowl. Mix well.
  3. Sprinkle the seasoning mixture all over the turkey, making sure to get in all the nooks and crannies. Rub the butter all over the turkey, including under the skin.
  4. Cover the turkey with plastic wrap and refrigerate overnight, or up to two days.
  5. Remove the turkey from the refrigerator and let sit at room temperature for at least an hour.
  6. Preheat your oven to 425°F. Place the turkey on a roasting rack in a roasting pan.
  7. Roast the turkey for 30 minutes, then reduce the oven temperature to 325°F. Continue to roast the turkey until a meat thermometer inserted into the thickest part of the thigh reads 165°F, about 2 1/2-3 hours total.
  8. Remove the turkey from the oven and let rest for at least 30 minutes before carving.

  • 1 lb. butternut squash, peeled and cubed
  • 2 large carrots, peeled and chopped
  • 1 large red onion, peeled and chopped
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tsp. dried thyme
  • 2 tsp. dried rosemary
  • 1 tsp. salt
  • 1/2 tsp. black pepper

Directions:

  1. Preheat your oven to 425°F. Line a large baking sheet with parchment paper.
  2. In a large bowl, toss together the Brussels sprouts, butternut squash, carrots, and red onion with the olive oil, garlic, thyme, rosemary, salt, and black pepper.
  3. Spread the vegetables out in a single layer on the prepared baking sheet.
  4. Roast for 30-40 minutes, stirring occasionally, until the vegetables are tender and caramelized.

Ingredients:

  • For the crust:
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1/2 cup unsalted butter, chilled and cut into small cubes
  • 3-4 tbsp. ice water
  • For the filling:
  • 1 15-oz. can pumpkin puree
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 2 eggs
  • 3/4 cup brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt

Directions:

  1. Make the crust: In a large bowl, whisk together the flour, salt, and sugar. Add the cubes of butter and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse sand.
  2. Add the ice water, one tablespoon at a time, until the dough comes together into a ball. Flatten the dough into a disk, wrap in plastic wrap, and refrigerate for at least an hour.
  3. Preheat your oven to 375°F.
  4. Roll out the dough on a lightly floured surface into a 12-inch circle. Transfer the dough to a 9-inch pie dish and trim the edges. Use a fork to prick the bottom of the crust all over.
  5. Bake the crust for 15-20 minutes, until lightly golden brown.
  6. Make the filling: In a large bowl, whisk together the pumpkin puree, heavy cream, milk, eggs, brown sugar, cinnamon, ginger, nutmeg, and salt.
