Low Carb Chicken Alfredo

Low Carb Chicken AlfredoThis low carb chicken alfredo recipe is one of my all-time favorites. It’s creamy, cheesy, and so satisfying! Here’s what you’ll need:

  • 1 pound chicken breast, diced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1/4 tsp black pepper
  • 8 oz. spaghetti squash, cooked

Instructions:

  1. In a large skillet, cook the chicken over medium-high heat until browned on all sides. Remove from pan and set aside.
  2. In the same pan, melt the butter over medium heat. Add the garlic and cook for 1-2 minutes.
  3. Add the heavy cream to the pan and bring to a simmer. Whisk in the parmesan cheese and black pepper until smooth.
  4. Add the cooked chicken back to the pan and stir until coated in the sauce.
  5. Serve the chicken alfredo over cooked spaghetti squash.

Low Carb Cauliflower Fried Rice

Low Carb Cauliflower Fried RiceThis low carb cauliflower fried rice is a great alternative to regular fried rice. It’s full of flavor and so satisfying! Here’s what you’ll need:

  • 1 head of cauliflower, riced
  • 2 tbsp olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas and carrots
  • 2 eggs, beaten
  • 1 tbsp soy sauce
  • 1/4 cup green onions, sliced

Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook for 2-3 minutes until softened.
  2. Add the frozen peas and carrots to the skillet and cook for another 2-3 minutes.
  3. Add the cauliflower rice to the skillet and cook for 5-7 minutes, stirring occasionally.
  4. Push the cauliflower rice to the sides of the skillet, and pour the beaten eggs into the center. Scramble the eggs until fully cooked, then mix them in with the cauliflower rice.
  5. Stir in the soy sauce and green onions, and serve!
